Carrot Cake Donuts!






Holiday baking is literally the best!  Mostly because it's pumpkin season and I love everything pumpkin.  I haven't loved baking in the recent years, but trying out paleo recipes is kind of a new hobby lately.  It's fun to find out healthier alternatives for things that I love!!  I meet with my health coach a few times each month, and she gave me this recipe that we made together.  I am a huge fan of carrot cake, but these donuts had me so excited!
Here's the main recipe, from rachlmansfield.com:

Wet Ingredients:
3/4 c. shredded carrots
1/3 c. coconut oil, melted and cooled.
2 Tbsp raw honey
2 eggs at room temperature
1 tsp. vanilla extract
1/3 c. creamy/drippy nut butter

Dry Ingredients:
1 and 1/4 c. almond flour
1 tsp. baking powder

Add in's:
1/2 c. walnuts
shredded coconut

Optional: frosting of choice.  My friend made a delicious recipe that consisted of vanilla plant based protein powder, coconut yogurt, bit of honey, and almond milk.  I don't have specifics quite yet.  I will soon! :)
