I am not even kidding when I say how good these things are. I have a HUGE sweet tooth and these brownie bites totally satisfy it. They are only sweetened with Medjool dates! Grain-free, vegan, paleo, and dairy free. You can definitely modify it. I found a recipe a while back, but I've since changed it a bit myself, so here is the recipe that I use!
10 Medjool dates
Pinch of sea salt
3 Tbsp. Cacao powder
1/2 tsp. Vanilla
1/2 c. Walnuts
1/2 c. Almond butter
You can use the walnuts and almond butter interchangeably, it really just depends what you prefer! Almond is a little easier to mix up in the food processor obviously, but I've done it with both and they both taste good! I usually start by putting the dates (make sure they have been pitted, those can cause problems in food processors :/) in a bowl of water, and microwave them/heat them over the stove for about a minute. They get softer, and if there are any remaining pits, they're easy to remove. Set them aside.
Add the nuts/nut butter, vanilla, cacao powder, and sea salt to the food processor. Once the dates have cooled a little bit, go ahead and add them too. Mix them in the food processor until you get a brown cookie-dough-like dough. Roll into balls and you can garnish them however you'd like! I rolled them in shredded coconut when I made these that are pictured, and they were way good! You could melt chocolate and put it on top even if you wanted!
